SOURCING + FISH
- Where does Happy Rice source its fish?
- Happy Rice works with trusted sourcing partners and prioritizes quality, transparency, and responsible sourcing. Every fish we serve can be traced back to its species, origin, and harvest.
- Is Happy Rice sushi sustainably sourced?
- We look beyond simple labels like “wild” or “farmed.” Instead, we evaluate how and where each fish was raised or caught and use trusted sustainability standards and certifications to help guide our sourcing decisions.
- Where does Happy Rice salmon come from?
- Our Atlantic salmon comes from Loch Duart in Scotland, where fish are raised at low densities with a focus on fish welfare and minimal environmental impact. The salmon is raised without habitual antibiotics or unnecessary chemicals and is naturally high in omega-3s.
- Where does Happy Rice tuna come from?
- We prioritize domestic tuna whenever possible from well-managed U.S. and Canadian fisheries. These fisheries follow quotas, gear requirements, and fishing-area restrictions designed to protect tuna populations and reduce their impact on other marine life.
- Where does Happy Rice amberjack come from?
- Our premium amberjack comes from ASC-certified producers selected for clean flavor, beautiful texture, and consistent quality. ASC certification includes standards around responsible feed, stocking density, chemical use, and environmental impact.
- Where does Happy Rice shrimp come from?
- Our wild Gulf shrimp comes from a fourth-generation Florida fishing operation. Their boats use specialized gear and shorter net times designed to reduce bycatch, protect vulnerable species, and deliver better-quality shrimp.
- Does Happy Rice use fresh or frozen fish?
- Quality comes first. Happy Rice may use fresh or super-frozen fish depending on the product, but we don’t accept fish that’s been chemically treated to preserve its color or artificially add water weight. Every delivery is inspected for freshness, quality, and integrity before reaching our kitchen.

ABOUT HAPPY RICE
- Why did you start Happy Rice?
- Happy Rice started with a pretty simple idea: sushi should be something you can eat regularly and actually feel good afterward. Co-founder Philip Turley wanted sushi that was fresh, light, made with ingredients he could trust, and energizing rather than heavy—something different from another bowl.
- What makes Happy Rice different from other sushi restaurants?
- We obsess over the details—from the fish we source to the ingredients that make it into every roll. Happy Rice is built around fresh fish, clean cuts, real ingredients, rice steamed fresh daily, and food designed around clarity, balance, and fuel rather than fillers.
- Is Happy Rice hiring?
- Yes. Happy Rice is building its team. We’re looking for thoughtful, hardworking, good-energy people who care about doing things well and showing up for their team. Current applicants can send a resume to hello@happyricesushi.com.
